Toddler quinoa, broccoli, & cheddar bites

These little bites are a perfect size for toddler hands, but also make a fun and tasty adult side/snack. As with all my baby/toddler recipes, they have been twin tested and approved. Except this was was only approved by one. The other was unsure about these.... So, I'm not sure if it was the texture or what because she likes broccoli, quinoa, and cheese.... but I guess not in this form. These are definitely for older toddlers with some good experience chewing and probably a few teeth. The baking makes the outsides slightly crunchy/chewy, but the inside remains soft. I froze these to reheat for a quick meal. Since it makes about 15 pieces, you may want to store them in the freezer (or just eat up the rest yourself). The microwave is probably your best bet for reheating to keep them soft and to not dry out (the quinoa and cheese may get too crunchy), but I have also used the oven. Let them thaw out in the refrigerator overnight before re-heating to serve. These are a little hand held meal!

Toddler quinoa, broccoli, & cheddar bites
1 cup frozen or fresh broccoli florets, cooked until very soft
1/3 cup dry quinoa, cooked to package directions
1 large egg
1/4 teaspoon onion powder
1/4 teaspoon garlic powder
1/4 teaspoon dried oregano (can sub other herbs like basil or parsley)
pinch of salt
1/3 cup grated cheddar cheese
about 1/3 cup baby oatmeal cereal (or other baby cereal, or breadcrumbs)

After you have cooked the broccoli, drain and chop it up into small pieces (small enough for baby to easily eat/chew). Set aside. If you cook the broccoli first, you can use the broccoli water to cook the quinoa!

In a large bowl, mix together the broccoli, cooked quinoa, egg, spices and salt, and cheese. Slowly stir in the cereal until the mixture comes together and can be easily shaped.

Line a baking sheet with parchment paper and preheat the oven to 350 degrees.

Using a spoon or small cookie dough scoop, gather the mixture and then roll into a ball. Gently place on the parchment and flatten with your fingers. Repeat until all the mixture is used.

Bake for approximately 12-14 minutes, flipping halfway through, until lightly golden and cooked through. Serve warm or refrigerate for up to 2 days and reheat. Otherwise freeze on the tray after cooled and store in a freezer bag.
