Slow cooker chicken, stuffing, & green beans dinner

A simple, hearty, one-pot dinner of chicken, stuffing, and green beans all comes together easily in your slow cooker. This is one of the easiest dinners and we enjoy it on a regular rotation.

Now, this is not a dinner you can leave in your slow cooker all day. It will get too soggy. It cooks on high for about 4 hours. It's best made on a day when you are home and want a simple and easy meal. It's perfect for a chilly weekend. This meal is comfort food and it reminds me of a mini Thanksgiving dinner.

This recipe calls for cream of mushroom soup. I always have a few cans on hand as I use them for stews and Crockpot dinners like this one. I like to buy the lower sodium versions like Aldi's "Fit and Active" brand, but any will do. 

Many recipes for this meal call for cream of chicken soup and that works well, too. I've never tried others like cream of celery, but they should all work just fine. I like to use the cream of mushroom because it reminds me a bit of green bean casserole. Sometimes I will add some chopped raw mushrooms under the green bean layer, or a small can of drained mushrooms, to enhance that flavor too.

Speaking of layers, this meal is layered in your slow cooker. First the chicken is placed in the bottom and topped with the box of stuffing mix. I've used several flavors of stuffing mixes - chicken, herb, Hawaiian bread, cornbread, etc. I like a chicken or herbs stuffing the best, but you can use whatever your family enjoys.

After the stuffing, you add the soup/sour cream layer. Lastly, you add the green beans on top. You can use packages of frozen green beans of your favorite cut - I like to use the extra fine green beans, but have used regular as well. 

I've used bags of frozen green beans ranging from 10.5 to 14 oz. in size and all work perfectly finer (I like the bigger bags personally for more green beans per serving). I like to add a bit of garlic and onion powder to the liquid layer, but this is optional.

Then everything is cooked for 4 hours on high and then switched to low or warm to set a bit before scooping and serving. You end up with tender chicken topped with stuffing and then a creamy layer of beans. 

You don't need to add anything else to this dinner - it contains your entire meal in one pot - your protein, starch, and vegetable. But, I often like to add a side of cranberry sauce or applesauce to this meal. I canned cranberry sauce last fall and always freeze applesauce in the fall, so these are things we have on hand and both my kids love.

Slow Cooker Chicken, Stuffing, & Green Beans Dinner

Ingredients

  • cooking spray
  • 2 lbs. boneless skinless chicken breast (about 4)
  • salt and freshly ground black pepper, to taste
  • 1 box (6 oz.) stuffing mix (I like chicken or herb flavors)
  • 1 can (10.5 oz.) cream of mushroom (or chicken) soup
  • 1/2 cup sour cream (I've used light and full fat with success)
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1/3 cup water
  • 1 bag (10-14 oz.) frozen green beans
  • parsley, for serving, optional

Instructions

  1. Spray your slow cooker with cooking spray. Place the chicken on the bottom in an even layer and season with salt and pepper.
  2. Pour the stuffing mix on top of the chicken in a even layer.
  3. In a medium bowl, stir together the cream of mushroom soup, sour cream, garlic powder, onion powder, and water. Spread on top of the stuffing layer. Top with the frozen green beans.
  4. Cover and cook on high for 4 hours. After 4 hours, turn to low or warm for about 30 minutes. Serve hot. Top with parsley, if desired.

  12. How long should you cook it on low for?

    1. I don't recommend the low setting for this dish; however, you can try 6-7 hours on low. The chicken needs to be fully cooked, so when it reaches 165 degrees. The chicken may get dry on the beans/stuffy too soggy on low.

    1. It's generally not recommended to put frozen meats in a slow cooker due to the potential bacterial growth from sitting too long at a low temp. I always used thawed.
