A quick and easy stir fry dinner is always a great choice, especially for a busy weeknight. This one is always a hit at our house as it's packed with flavor and contains pineapple, which is a family favorite.
I always enjoy incorporating fruit into meal because it is generally a kid-friendly (as opposed to a lot of vegetables) option. The sauce is made from the canned pineapple juice as well, so there's no waste.
This stir fry uses snow peas, which are a late spring and early summer vegetable. I often grow them in our garden and they are sweet and crunchy.
You do want to snap off the stem ends of the snow peas and "unzip" them all the way down the pod so they the tough string and stem are removed.
I like to serve pineapple chicken and snow peas with cooked hot white rice. You can use brown rice or other rice blends if you prefer.
I add chopped cilantro at the end, but cilantro is a very divisive ingredient. You can absolutely leave it out if you prefer, or if you don't have it. I like the bright herb flavor at the end, but it's not a requirement.
I keep the sauce on the mild side with only 1/2 teaspoon of sriracha included in the ingredients. You can make it hotter by adding more. We have it on the table so those who want more can add it to their heat preference level.
I really enjoy the sauce in this stir fry. The tangy and sweet pineapple juice paired with the salty soy sauce, sweet honey, and spicy sriracha all come together in a flavor-packed combination.
If you want even more color and flavor, a chopped red bell pepper is a nice addition to this stir fry. You can also toss in some cashews for extra crunch and flavor.

Pineapple Chicken and Snow Peas
Pineapple chicken and snow peas is a flavorful meal that is perfect for spring time. It's quick and easy, and perfect for a weeknight.
Ingredients
- 20 oz. can of chunked pineapple in juice
- 1/4 cup soy sauce
- 3 teaspoons cornstarch
- 1 tablespoon honey
- 1/2 teaspoon Sriracha
- 1 tablespoon olive oil
- ~1 lb. chicken breasts, cut into bite-sized pieces
- 3 scallions, sliced, greens and whites separated
- 2 garlic cloves, minced
- 8 oz. snow peas
- 1/3 cup chopped cilantro, optional
- 1 cup rice, cooked to package directions, for serving
Instructions
- Drain the pineapple juice into a medium bowl and set aside the pineapple chunks. To the bowl, whisk in the soy sauce, cornstarch, honey, and Sriracha. Set aside.
- Pull off the stem end of the snow peas and then pull off the whole "string" part along the snow peas to "unzip" them so that they are not tough to eat.
- In a large skillet, heat about a tablespoon of olive oil over medium heat. When hot add the chicken and let brown, stirring occasionally until cooked through.
- Stir in the scallion whites and garlic and cook for another minute. Stir in the sauce and let it come to a boil. Reduce the heat to simmer until the sauce slightly thickens and then stir in the pineapple and snow peas.
- Cook until heated through. Stir in the scallion greens and cilantro, if using.
- Serve hot with cooked hot rice.

I have been doing a ton of freezer cooking ever since my son was born - here are some suggestions: pulled pork/chicken, meatballs (I usually freeze them raw), enchiladas, mac n cheese, pizza (the kitchn has a tutorial for making frozen pizza), burritos, taco fillings (Cooking Light recently had a great slow cooker brisket taco filling), sauces for quick pasta meals (pesto, marinara, meat sauce), fried rice, quiche/frittata. If you grill in the summer you could also freeze some raw chicken or other meat in marinade so that you can just throw it on the grill after thawing. And of course - freeze some baked goods and raw cookie dough so you can treat yourself to fresh cookies on those first sleep-deprived days!

ReplyDeleteYum! I've heard that pregnant women crave pineapple. :) I can't believe you're meeting your twins so soon! Maybe tacos would be good for summertime? You could make the meat and beans and freeze it and then just defrost and serve with tortillas, cheese, and lettuce.
ReplyDeleteIt is a bit difficult to make freezer-appropriate meals in the summer, isn't it? You might want to make some pasta sauces -- and then you can just thaw them, and toss with pasta. Or some slow-cooker BBQ pulled pork or chicken -- that's appropriate summer fare, and freezes well. Or maybe cook some beans and freeze them -- you can thaw them, then make them into a salad with tuna. Anyway, this dish looks wonderful! Probably wouldn't freeze that well, alas, but that means I'll have to have seconds. :-)

For Asian we need to take hot food and drink lots of nutrition soup. Ginger fried rice is quick and easy to cook. Beside that stir fry ginger pork or chicken is also a quick dish. You can freeze it and warm it up before serving.

This sounds like a good meal, my husband loves dishes with pineapple. Since it is getting harder to cook, what about buying some rotisserie chickens and taking the meat off the bones and freezing in small packages. Defrosted you could add the meat to salads, sandwiches and pasta.
