Mixed berry pie

Mixed berry pie is bursting with summer berries and fresh flavors and is a perfect summer time dessert. Serve it with a scoop of vanilla ice cream for an extra delicious summer treat.

I love summer berry season. Strawberries, blueberries, blackberries, raspberries - they are all so delicious on their own and when they are mixed together.

This mixed berry pie is a delicious way to enjoy summer berry season. This pie used about 4 cups of berries in the filling. 

For this version I used a mixture of chopped strawberries, blueberries, and raspberries. You can use any combination of berries that you enjoy and have on hand. Blackberries and black raspberries would be delicious additions to this pie.

When you make this pie, you need a double pie crust. You can use a homemade crust, or a store bought crust, whichever you prefer.

My favorite all butter pie crust (this is a single pie crust recipe, so you need to make it twice) is detailed in this post for apple crumb pie.

I made a lattice top for this pie. This requires you to cut one of the rolled out pie crusts into strips that are about 1/2" wide. Then you "weave" them on top of the pie crust. 

I like to lay down all the vertical pieces and then do the horizontal strips one at a time, going over and under the vertical strips until you reach the end.

Then you want to cut off any extra and crimp the strips of pie crust together with the bottom pie crust that is already in the pie plate. 

As I always say when you are making a pie, or anything homemade like this, it does not need to be perfect. Don't worry if the pie crust isn't picture perfect - just do your best and have fun - it will still be delicious. 

Homemade pie can be daunting for some, but it's worth it if you want to give it a try. I love homemade pie and it's such a wonderful treat.

Serve up with pie as is, or top it with some whipped cream or with a scoop of vanilla ice cream. I love the ice cream on a summer day, but either way it will be delicious.

  • double recipe for your favorite pie crust
  • 4 cups of berries (I used a mix of chopped strawberries, blueberries, and raspberries) - fresh or frozen and thawed
  • 1 cup sugar
  • 2 tablespoons lemon juice
  • 1/4 cup cornstarch
  • pinch of salt
  • 1 egg


  1. Roll out one crust and fit into a 9-inch pie plate. Leave the overhang for now.
  2. Preheat the oven to 350 degrees.
  3. In a medium pot, mix together the berries, sugar, lemon juice, cornstarch, and salt. Heat over medium heat and bring to a boil, stirring often.
  4. Reduce to a simmer and cook until the mixture begins to thicken, about 5 minutes. Remove from the heat and let cool slightly.
  5. Roll out the second crust and cut it using a sharp knife or pizza cutter into about 1/2-inch strips. Pour the filling into the pie pan.
  6. Top with the crust strips in a lattice pattern. Then remove the crust overhang and crimp together the edges.
  7. Lightly beat the egg and brush it onto the top of the crust.
  8. Bake for about 45-50 minutes, until the crust is lightly golden and the filling is bubbly.
  9. Let cool before slicing.
