Beyond strawberry rhubarb pie: A rhubarb recipe round-up

Rhubarb stalks.

Rhubarb season is here and there are so many ways to enjoy this tart seasonal vegetable. Strawberry rhubarb pie is the most popular, but there are so many other ways to use it.

Not that there's anything wrong with strawberry-rhubarb pie, of course. It's delicious and it's a classic for very good reason. But, there are so many other tasty things you can make with rhubarb. It's often an under-appreciated ingredient, but it's popping up in gardens all over our area right now, so it's the perfect time to explore other uses.

Rhubarb is considered a vegetable and you only eat the stalks/stems (the leaves are toxic). It's often treated more like a fruit for cooking; however, there are many savory ways to enjoy it. It adds a terrific tartness and tang making it a terrific contrast to sweet flavors.

I grew up with a giant rhubarb plant in my yard and it seemed like everyone had one where I grew up. We enjoyed rhubarb desserts a lot, but mostly only strawberry rhubarb pie and strawberry rhubarb crisp.

Here I've collected a bunch of rhubarb recipes for all meals of the day including a few ways to use it in beverages. Please check out all these recipes utilizing rhubarb in both sweet and savory dishes. I hope you are inspired to use more rhubarb recipes in your kitchen and in your family's meals.

  9. What a terrific array of rhubarb recipes! I added a second plant to our garden, but it doesn't flourish here like in the rich soil of my childhood home. But I'm hoping to harvest enough to bake a little something!
