Moroccan spices combine in this unique beef stew full of sweet potatoes, apples, and raisins for a warming, hearty, and delicious autumn meal. This is a delicious dish for a cool or rainy fall day to warm you right up.
Apples and sweet potatoes go so well together and both of them are perfect for pairing with spices and a little bit of heat because of their sweetness. This stew is so full of so many delicious flavors and different textures. The apples retain a bit of their crispiness, which I really enjoy.
I love the warm Moroccan spices like cinnamon, coriander, and ginger with apples for a beef stew that is a change-up from the usual beef stew. There is quite a long list of spices needed for this stew. I do tend to keep a very well-stocked spice cabinet since I cook a lot and cook all sorts of cuisines. They are all spices that you can use in many different ways though.
Couscous rounds out this dish along with some crunchy almonds and fresh parsley. It's a lovely autumn meal to add to your menu this fall. My husband and I really enjoy this dish and I think this meal will be a favorite once you give it a try!

Moroccan Apple & Sweet Potato Beef Stew
Moroccan spices combine in this unique beef stew full of sweet potatoes, apples, and raisins for a warming, hearty, and delicious autumn meal.
ingredients:
- 1 tablespoon olive oil
- 1 lb beef stew meat
- 1 small onion, diced
- salt and freshly ground black pepper, to taste
- 1/2 teaspoon cinnamon
- 1/2 teaspoon cumin
- 1 teaspoon ground coriander
- 1 teaspoon ground turmeric
- 1/4 teaspoon ground ginger
- 1/8 teaspoon ground red pepper
- 3 garlic cloves, minced
- 2 cups peeled and diced sweet potatoes
- 1/2 cup golden raisins
- 1 can (8 oz.) tomato sauce
- 3/4 cup apple cider
- 3/4 cup beef broth
- 1 large Envy apple, peeled, cored, and diced
- 1/4 cup sliced almonds
- minced parsley, for serving
- 8 oz. couscous, cooked to package directions

How to cook Moroccan Apple & Sweet Potato Beef Stew
- In a large soup pot or Dutch oven, heat the olive oil over medium heat. Add the stew beef, onion, and a good pinch of salt and a few grinds of pepper. Let the beef brown and then stir. Add in the spices (cinnamon through red pepper) and stir well. When the beef is browned on all sides, stir in the garlic and cook for another minute.
- Stir in the sweet potatoes, raisins, tomato sauce, apple cider, and beef broth and let the mixture come to a boil. Reduce to a simmer and stir in the apple. Continue to simmer, stirring often, until the beef and sweet potatoes are tender (if the stew gets too dry, add another splash of cider/broth). Taste for seasoning and adjust if needed.
- Serve hot in bowls with couscous and top each bowl with some sliced almonds and parsley.
NOTES:
Since I am feeding small kids, I only used a small amount of red pepper. Add more for bigger heat kick.
