I hope everyone is ready for all of their holiday celebrations! I've been baking up a storm this week with my little helpers. We wrapped up a bunch of cookies for some of our neighbors and went for a walk to deliver them all yesterday. The kids had so much fun giving their cookies to some of their special neighbors and many of the neighbors were very happy and grateful (and surprised) for their little gifts.

I'm always a big fan of chocolate and peppermint. I like it all year round, but especially at the holidays. These cookies are a chewy chocolate cookie and I used a little bit of peppermint extract along with the mint chips for an extra boost of flavor.

Other times of the year you can just use more vanilla extract and use regular chocolate chips, white chocolate chips, butterscotch, dark chocolate, whatever chips you like. You could use walnuts instead as well, or a mix of nuts and chips. They are versatile and really yummy!

ingredients:

  • 3/4 cup (1-1/2 sticks) unsalted butter, softened
  • 1 cup sugar
  • 1/2 cup light brown sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon peppermint extract
  • 2 cups all-purpose flour
  • 2/3 cup cocoa powder
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 cup mint chips, plus more for topping

How to cook Chewy chocolate mint chip cookies

  1. Preheat the oven to 350 degrees. Line two baking sheets with parchment or silicone mats.
  2. In a stand mixer with a paddle attachment (or in a large bowl using a hand mixer), beat the butter and sugars until light and fluffy. Then beat in the eggs, vanilla, and peppermint extract.
  3. In a large bowl, whisk together the flour, cocoa powder, baking soda, and salt. Slowly add the dry ingredients into the wet until combined.
  4. Fold in the mint chips.
  5. Scoop the dough by heaped tablespoons and roll in your hands. Place on the baking sheets about one inch apart.
  6. Bake for about 9-11 minutes, until the edges and bottoms are set and golden. Let cool on the baking sheets for about 5 minutes. Press a few extra mint chips into the top of each cookie. Then place the cookies on a wire rack to cool.
  7. Store in an airtight container.
