Chicken fajita quinoa bowls

Chicken fajita quinoa bowls are a dish we've been enjoying frequently for dinner lately. I found a jar of quinoa when I was cleaning out the pantry and we always have chicken in the freezer. We use other items that we frequently have on hand like frozen corn, salsa, onions, cheese, pickled jalapenos, bell peppers, and more.

The best part about this dish is that it is so versatile. The recipe is for the basic building blocks, but you can remove any ingredients that you don't have or don't enjoy, and also add others you have or prefer.

Black beans, pinto beans, chopped lettuce, cilantro, and green onions would all be delicious in here. You can use sirloin steaks instead of chicken, or beans instead of chicken, or even firm tofu instead of chicken. Ground turkey would also work if you prefer.

Sometimes I add an extra bell pepper if we have one. Kick up the spice with some cayenne pepper in the spice mix or some hot sauce for topping.

I love meals like this that are relatively customizable and you can change it up based on what you have at home, or by your preferences. Plus, my kids love any sort of "build your own" meals. 

For this one, they can put what they want in their bowls and everyone can chose what they want from the options available. Everyone can add their own toppings and additions like hot sauce, salsas, and/or pickled jalapenos to get to the heat levels they enjoy.

Chicken fajita quinoa bowls

Ingredients:

  • 1 tablespoon olive oil
  • 1 lb. boneless, skinless chicken breasts, cut into thin strips
  • 1/2 teaspoon smoked paprika
  • 1/2 teaspoon ground coriander
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon dried oregano
  • salt and freshly ground black pepper, to taste
  • 1 large bell pepper, seeded and sliced into strips
  • 1 small sweet yellow onion, peeled and sliced (from stem to root)
  • 1 cup quinoa, rinsed and cooked to package directions
  • 1 cup frozen corn, cooked
  • 1 large tomato, chopped
  • 1 avocado, peeled and sliced
  • grated cheddar cheese, sour cream, salsa, pickled jalapenos, for topping
  • other toppings of your choice, optional
  • tortilla chips, for serving, optional

How to cook Chicken fajita quinoa bowls

  1. In a large skillet, heat the olive oil over medium heat. Add the chicken and all the spices. Stir occasionally until the chicken is cooked through.
  2. Stir in the peppers and onions and check seasoning. Cook until the vegetables are just softened.
  3. While the chicken cooks, cook the quinoa and corn.
  4. In each bowl, place your desired amount of quinoa, chicken fajita mix, and corn. Then top with the tomato, avocado, cheese, sour cream, salsa, and/or any other toppings you are using.
  5. Serve with tortilla chips, if desired.

  1. Very tasty and flavourful! I am not sure I still have some quinoa in the pantry, but I guess other seeds or beans (like kaniwa, chickpea or buckwheat) would just as beautiful.
