Skillet portobello mushroom fajitas

Fajitas are always a hit in our house and these vegetarian ones featuring portobello mushrooms have been showing up on our menu frequently lately. Mushrooms are something we all enjoy and I like to use them instead of meat occasionally where I can.

We've been incorporating more and more vegetarian and sometimes vegan dishes into our rotation. Mushrooms are one of our favorite ways to do that. You can make delicious and hearty meals with them and probably not even miss the meat.

All you need to make these fajitas are a few simple ingredients - the large portobello mushroom caps, bell peppers, sweet onions, and some spices. The you can eat them on tortillas with your favorite toppings such as sour cream, salsa, cheese, avocado, shredded lettuce, diced tomatoes, etc. 

What are portobello mushrooms? They are just large cremini (or brown) mushrooms. You'll find them spelled as portabello and portabella as well, but they are all the same thing.

You can also use them to make "bowls" and serve the fajita filling on rice instead of in a tortilla. Add all your favorite toppings for a delicious and customizable dinner. My kids always enjoy those kids of dinners where they can add the toppings they like.

I like to use smoked paprika in fajitas to add a bit of that smokey grilled flavor. It's one of those spices I always keep around because it adds such a great flavor punch. Along with some garlic, oregano, and coriander, the mushrooms and peppers are flavorful without being overly spicy or hot.

Skillet Portobello Mushroom Fajitas

Large portobello mushroom caps are cooked with sweet onions and bell peppers in a one-skillet dinner to make these delicious vegetarian fajitas. Served in warmed tortillas with your favorite toppings, they make an easy weeknight dinner for the whole family.


  • 1 tablespoon olive oil
  • 4 large portobello mushroom caps, washed and sliced with stem removed
  • 1 large sweet yellow onion, peeled and sliced into strips
  • 2 bell peppers, seeded and sliced into strips
  • 1 teaspoon smoked paprika
  • 1 teaspoon garlic powder
  • 1/2 teaspoon ground coriander
  • 1/2 teaspoon dried oregano
  • salt and freshly ground black pepper, to taste
  • flour tortillas, for serving
  • toppings of your choice such as salsa, sour cream, cilantro, cheese, etc.


  1. Heat the olive oil in a large cast iron or non-stick skillet over medium heat. When hot, add the mushrooms. Let them cook undisturbed for a couple of minutes. Then add the onion and peppers on top.
  2. Add the smoked paprika, garlic powder, coriander, oregano, a good pinch of salt, and a couple grinds of pepper. Give everything a good stir.
  3. Continue cooking, stirring occasionally, until the vegetables reach your desired doneness. Adjust seasoning as needed.
  4. Serve on warmed tortillas with your favorite toppings. You may also want to add a side like rice, beans, or chips and salsa.
