If you have an ice cream maker, bring it out this summer to make a cool and refreshing homemade ice cream. There are many ice cream makers out there. I use the KitchenAid Stand Mixer Ice Cream Maker attachment.

Cherry cheesecake ice cream is a dessert to make during summer time cherry season. The base tastes like a creamy cheesecake filling. It uses milk, cream cheese, and sour cream to achieve the cheesecake filling taste.

Pitted and chopped fresh cherries are added to the ice cream for a punch of fruit flavor. Cherry and cheesecake are a classic combination, so they go well together in this ice cream.

For extra cheesecake flavor and texture, you can add some crumbled graham crackers when you add the cherries to the ice cream. Or, when serving, top your ice cream with some crushed graham crackers to mimic the cheesecake crust.

We try to go cherry picking at a small family farm each year and fresh cherries are such a treat! I enjoy the sweet black cherries, sweet red cherries, and sour cherries when I can find them. 

This ice cream is best for sweet cherries. I like to use the dark sweet cherries because they add a terrific sweet cherry flavor, and their juices add a touch of color to the ice cream.

For this ice cream recipe, you only need a cup of pitted and chopped fresh cherries. You can do that by hand very carefully with a small paring knife, or use a cherry pitting tool. A pitting tool is easier (and doesn't stain your hands like juicy dark cherries can).

Cherry Cheesecake Ice Cream

A rich and creamy ice cream that taste like a cheesecake filling with fresh summer cherries makes for a cool and delicious dessert.

Ingredients

  • 2 cups whole milk
  • 5 oz. cream cheese, cut into cubes
  • pinch of sea salt
  • 1/3 to 1/2 cup sugar
  • 1/3 cup sour cream
  • 1 cup pitted and chopped sweet cherries

Instructions

  1. In a large saucepan, heat the milk over medium-low heat, whisking often, until it is heated through.
  2. Whisk in the cream cheese, salt, and sugar (I used just over 1/3 a cup - you can taste the base and add more keeping in mind that it will taste less sweet once frozen).
  3. Continue to heat and whisk until the cream cheese and sugar are melted and thoroughly combined. Turn off the heat and whisk in the sour cream.
  4. Pour the mixture into a bowl or large glass measuring cup. Cover and refrigerate until very cold, at least three hours. Keep the cherries in the refrigerator as well.
  5. When cold, churn the ice cream base in your ice cream maker according to manufacturer directions. After about 10 minutes (once the mixture begins to resemble soft-serve), add the cherries. Continue to churn until the ice cream reaches your desired consistency.
  6. Serve immediately or pack into a freezer container and transfer to the freezer for a harder ice cream.
