Pepperoni Pizza Stuffed Spaghetti Squash

Spaghetti squash are something that we used to eat a lot mainly because my father in law used to grow them in his garden and then give us a bunch each autumn. I was always coming up with ways to eat them. 
 
This pepperoni pizza stuffed spaghetti squash became one of our favorites. It's full of all the flavors of a pizza, but baked into a spaghetti squash instead of on a dough. 
 
The recipe starts out by baking the halved spaghetti squash until it is cooked though. Then you carefully scrape out the strands and mix them with the remaining ingredients (except the mozzarella). Then you put it all back into the spaghetti squash skins, top with mozzarella, and bake until hot and golden.

I like to serve this with a green salad for a complete dinner. When I make this I use a small to medium spaghetti squash so that each half is enough for one person. The skins make a fun serving dish. 
 
I have always made this recipe using pepperoni, but you can use drained canned mushroom slices instead for a meat-free version. Or try some chopped bell peppers and onions. You can use the toppings you enjoy on your pizza.
 
If you've never had spaghetti squash before, it is different than most winter squashes like pumpkin, butternut, or acorn. Spaghetti squash is a lighter yellow inside and when you cook it, the fleshy part turns into strands similar to spaghetti noodles. 
 
Spaghetti squash isn't a very flavorful vegetable on its own, so you can really use it as a canvas for all kinds of dishes and flavors. It makes it a tasty way to get more vegetables into your diet.

No, this recipe does not replace pizza - it's simply a fun and different way to eat spaghetti squash. We love pizza here and eat it frequently. That's why I like these flavors that are reminiscent of a pizza baked into the squash.  
 
I think this recipe is a great one for people who may not generally enjoy spaghetti squash, or even for kids to help them try spaghetti squash as a new vegetable.

Pepperoni Pizza Stuffed Spaghetti Squash

Pepperoni Pizza Stuffed Spaghetti Squash

Spaghetti squash stuffed with the flavors of a pepperoni pizza and baked until golden and bubbly makes for a delicious dinner. 

Ingredients

  • 1 small-medium spaghetti squash, halved lengthwise with seeds and strings removed
  • about 3/4 cup tomato sauce
  • 1/3 cup roughly chopped pepperoni*
  • 1 garlic clove, finely minced
  • 2 tablespoons Parmesan cheese, plus more for topping
  • 1/4 teaspoon red pepper flakes
  • 1 teaspoon dried parsley, plus more for serving
  • 1 teaspoon Italian seasoning, plus more for topping
  • salt and freshly ground black pepper, to taste
  • 1 cup shredded mozzarella cheese

Instructions

  1. Preheat the oven to 400 degrees. Place the spaghetti squash in a baking dish, cut-side up. Bake until fork tender, about 35-40 minutes. Remove from the oven and let cool until you can handle them.
  2. Carefully scrape out the spaghetti squash strands into a large bowl, taking care to not break the skin. Put the squash skins back into the baking dish.
  3. Add the remaining ingredients, except the mozzarella, to the bowl and stir until well-combined. Add more sauce, if desired. Divide the mixture equally into the spaghetti squash skins.
  4. Top each with half of the mozzarella, a bit more Parmesan, and a sprinkle of Italian seasoning. Return to the oven and bake until the cheese is melted and golden, about 20-25 minutes. You can pop them under the broiler for a couple of minutes to get the cheese extra browned (just watch them closely).
  5. Serve hot topped with an extra sprinkle of parsley.

Notes

*Substitute drained canned mushrooms for a meat-free option.
