Savory onion pie

This pie is inspired by a recipe I found in an old paperback copy of The Old Farmer's Almanac Colonial Cookbook which used to be in my mom's cookbook collection. This book is loaded with old-fashioned recipes including one for an onion pie. 

This pie is pretty much a quiche (okay, it is a quiche). But, this one is really all about the two pounds of caramelized onions and not the eggs. The filling is loaded with sweet caramelized onions and crispy salty bacon. A perfect compliment to the eggs.Slice of savory onion pie on a serving plate. One of the best parts of any pie? The crust. While a store bought crust is always a fine choice and a time saver, homemade pie crusts are not overly complicated to make. 

I will often make them a day ahead of time and then pull them out of the refrigerator about 30 minutes before I'm ready to roll and assemble the pie. This helps to make the process quicker than making the pie crust the day of as it does require some refrigerator time.

If you want to try my favorite pie crust recipe, you can find a recipe and a tutorial in this post for apple crumb pie. It's an easy pie crust that turns out very flaky and flavorful. It's even made in the food processor. But, really, no shame at all in a store bought pie crust.

What kind of onions are best for this savory onion pie? 
Well, I like a mix here. I used half sweet yellow onions and half red onions. I like the mix of flavor and color. You can use the onions you prefer, or you have on hand, but I really enjoy the way sweet yellow onions caramelize.

This savory onion pie is a terrific meal for breakfast, brunch, lunch, or dinner. Make a green salad for a side dish and a full meal. You can eat this warm or at room temperature, but like with all pies, you want to give it some time to cool before cutting. 
This will allow the filling to be set and the bottom crust to cool and firm up a bit. You can also refrigerate this pie and pull it out for a while to warm up before cutting and serving.
