Spicy tofu and pinto beans (Sofritas)

Spicy tofu and pinto beans make for a delicious filling for burritos, tacos, burrito bowls, and more. This filling is perfect for making a flavorful vegetarian dinner.

Sofritas are a copycat recipe from Chipotle. This filling combines spiced firm tofu and canned pinto beans in a slightly sweet, smoky, and spicy sauce of ancho chiles, chipotle chile peppers in adobo, tomato sauce, and garlic.  

You make a quick homemade chile and tomato based hot sauce and then use it to spice up the filling. For the sauce you need a can or jar of tomato sauce. This is plain tomato sauce (not a pasta sauce) without any spices or other flavorings in it.

You can find dried ancho chiles at many larger grocery store or you can order them online. They are not a very hot pepper and have a sweet, almost raisin-like flavor to them. 

Chipotle in adobo peppers are smoked jalapenos in a spicy sauce and these are readily found in can at the grocery store. These peppers and the sauce are where most of the heat comes from in this recipe.

While this sauce is a bit spicy, you don't need to use it all. Start with adding about 1/3 to 1/2 a cup to the tofu and bean mixture and then taste it. Add more if you like it extra hot, or serve the bowl of sauce on the side for everyone to add more to their liking if they choose.

If you serve the Sofritas on rice or tortilla chips and add toppings, those will help to mute a bit of the heat as well. Lettuce, shredded cabbage, diced tomatoes, sour cream, cheese, extra cilantro, diced avocado, and quick pickled red onions are just a few of the toppings that would go well with this dish.
We always enjoy those type of customizable "make your own" meals in our house. Cook up a steamy pot of white rice, warm some flour tortillas, or use the Sofritas as a topping for a taco salad or nachos. Then have a bunch of toppings available for each person to choose from and build their own plates. 

Spicy tofu and pinto beans is a delicious, hearty, and filling meat-free dinner. It's perfect for vegetarians or for trying to incorporate more meatless dinners into your rotation.

  5. I just happen to have a can of ancho chili's in my pantry. I bought is as a whim item as things like this are difficult to find in Asia. Now you have given me the perfect recipe and of course will have to make a side of rice.
