When the warmer weather arrives, the first herbs in our herb garden that begin to start sprouting up are the chives and flat-leaf parsley. I am always so happy when it's time to start enjoying fresh herbs and fresh produce again.

Dip is a favorite snack or appetizer in our house. I love dips because they are a terrific way to get the whole family to eat more vegetables. Flavorful dips are a terrific way to encourage kids and adults alike to enjoy more vegetables.

I like to put out a tray of fresh vegetables and dip whenever we have people over for dinner or a party. I always like it for a potluck event. Plus we like to have vegetables and dip when watching a football game, a movie, or having a game night.

This fresh garlic and herb dip uses finely grated fresh garlic cloves. To get garlic down to a very fine texture, I like to use a microplane. The garlic is paired with fresh chives for more garlic and onion-y flavor and some fresh parsley.

This dip pairs perfectly with so many fresh vegetables. Celery sticks, cucumber slices, carrot sticks, broccoli florets, cherry or grape tomatoes, bell pepper sticks, cauliflower florets, and more.

It's also good to serve with crackers, pretzels, or your favorite potato chips. You can also serve it on a baked potato.

Fresh garlic and herb dip can be made a day or so ahead of time and refrigerated. It will become stronger in flavor overnight as the garlic and herbs really permeate through the dip.

Fresh Garlic and Herb Dip

Cool, creamy, and full of fresh garlic and herbs, this dip is sure to get you to eat more vegetables!

  • 4 oz Neufchatel cheese (or cream cheese), slightly softened
  • 1/3 cup sour cream (I used light)
  • 1/4 cup mayonnaise (I use the kind made with olive oil)
  • 1 tablespoon milk
  • 2 garlic cloves
  • 1-1/2 tablespoons minced fresh chives
  • 1-1/2 tablespoons minced fresh parsley
  • salt and freshly ground black pepper, to taste

  1. In a medium/large bowl, beat the cheese, sour cream, mayonnaise, and milk together with a hand mixer on high until smooth.
  2. Use a microplane to grate the garlic cloves into the mixture (alternatively, mince the garlic super fine). Add the chives, parsley, and a good pinch of salt along with a couple grinds of black pepper. Beat until well-combined and taste for salt and pepper, adjusting as needed.
  3. Cover the bowl with plastic wrap and refrigerate overnight before serving for best results (you can serve right away, but it will not be as flavorful).
  4. Serve cold with your choice of raw vegetables, pretzels, etc.
