Slow cooker apricot chicken

Chicken thighs are cooked until tender in the slow cooker with a sticky sauce of apricots, soy, and mustard, and then topped with sliced almonds for a bit of crunch.

Slow cooker meals are a favorite of mine. They are time savers and are something I try to incorporate into our meal plans all year round. 

Sometimes people consider slow cooker meals to be appropriate for the cold weather months only, but I love to make meals in them in the summer to save time in the kitchen. I find that they come in handy anytime of the year and any season.

This slow cooker apricot chicken uses only a few ingredients to make a flavorful chicken dish. I like to make this dish with boneless, skinless chicken thighs as they stay nice and moist in this dish. 

However, you can use chicken breasts if you prefer. Chicken breasts may take slightly longer to cook unless they are cut in half lengthwise and they generally do not come out as moist as thighs.

This sauce in this recipe is made from dried apricots, apricot preserves, soy sauce, grainy mustard, garlic powder, water, and cornstarch. The flavor combination makes for a sweet, tangy, and a little salty combination.

Then when the chicken is cooked and ready to serve, it is topped with sliced almonds for some crunch.

Slow cooker apricot chicken is delicious served with rice and a vegetable or vegetables of your choice such as broccoli, carrots, cauliflower, snow peas, or asparagus. 

This is a great meal to try with kids since the apricot and apricot preserves add a bit of sweetness to the chicken.

Slow Cooker Apricot Chicken

Chicken thighs are cooked until tender in the slow cooker with a sticky sauce of apricots, soy, and mustard, and then topped with sliced almonds for a bit of crunch.

Ingredients

  • olive oil, for greasing
  • 1-1/2 lbs. boneless, skinless chicken thighs
  • salt and freshly ground black pepper
  • 1/3 cup firmly packed, roughly chopped dried apricots
  • 1/4 cup soy sauce (I like low sodium)
  • 1 tablespoon grainy mustard
  • 1/4 cup apricot preserves
  • 1/4 teaspoon garlic powder
  • 1/4 cup cold water
  • 2 teaspoons corn starch
  • sliced almonds, for topping

Instructions

  1. Lightly grease the inside of the slow cooker with olive (or vegetable) oil.
  2. Arrange the chicken on the bottom, sprinkle with a little salt and a few grinds of black pepper, and add in the apricots.
  3. In a bowl, or large glass measuring cup, whisk together the soy sauce through corn starch until smooth. Pour over the chicken.
  4. Cook on high for about 4 hours or low for about 6 hours, until the chicken is tender and the sauce is thickened. Check for seasoning.
  5. Serve with rice and vegetables. Top with almonds.
