Passion fruit & blood orange curd tart

It's another edition of #FreakFruitsFriday today with Melissa's Produce and I'm excited to share this delicious and unique tart. For this tart I used two of the freaky fruits I received - passion fruit and blood oranges. These are both tart fruits making them perfect choices for a dessert.

I love desserts with lemon, lime, etc. because they really help offset the sweetness and provide complexity to the flavor of the recipe. I was going to make a curd with just one of the fruits, but combining them was a great idea! 

The blood orange juice gave the curd a darker color and a hint of citrus and the passion fruit provided that distinct tropical smell and flavor.

It's been a while since I've used my tart pan. I used to make tarts more frequently. Tarts are a nice size for a dessert that contains a rich filling like a curd rather than a pie where the filling would be too much. I used a shortbread crust for this recipe because they are simple and delicious.

Have you ever tried passion fruit or blood oranges? I had passion fruit when my now husband was living and working in the Everglades. It's definitely something that lends itself to desserts and other recipes with sugar as it is quite tart on its own. Blood oranges are also pretty tart and super pretty! I like them sliced into salads.

Passion Fruit & Blood Orange Curd Tart

This sweet and tangy tart is similar to a lemon tart, but better and more complex! It's delicious, creamy, and full of a tropical feel for a delicious and refreshing dessert.

ingredients:

For the crust
  • 1 cup all-purpose flour
  • 1/3 cup powdered sugar
  • 1/4 teaspoon salt
  • 1/2 cup (1 stick) unsalted butter (cold and cut into chunks)
For the filling
  • 1/4 cup passion fruit juice/pulp (no seeds)
  • 1/4 cup fresh blood orange juice
  • 6 large egg yolks
  • 1 egg
  • 1/2 cup sugar
  • 1/2 teaspoon pure vanilla extract 
  • 6 tablespoons unsalted butter, cut into tablespoon pieces
For the whipped cream (optional)
  • 1/2 cup heavy whipping cream
  • 1 tablespoon powdered sugar
  • zest of 1 blood orange

How to cook Passion Fruit & Blood Orange Curd Tart

  1. First make the crust. Pulse together the flour, powdered sugar, and salt in a food processor until combined. Pulse in the cold butter into it resembles a fine crumb. Dump into a 9-inch tart pan and press it evenly into the sides and bottom. Place on a baking sheet and freeze for about 15 minutes.
  2. Preheat the oven to 400 degrees. Bake the tart shell for about 20 minutes, until it just starts to turn golden. Set aside to cool and reduce the oven temperature to 325 degrees.
  3. Meanwhile, make the curd filling. In a medium heavy bottom saucepan, whisk together the passion fruit juice/pulp, blood orange juice, egg yolks, egg, sugar, and vanilla. Heat over medium heat, whisking often, until the mixture thickens, about 7-9 minutes. Remove from the heat and immediately strain through a fine mesh strainer into a bowl. Stir in the butter.
  4. Pour the curd into the tart shell and spread evenly. Bake for about 15-18 minutes, until the filling is set.
  5. Let cool completely or refrigerate until cool, before cutting.
  6. Before serving, make the whipped cream. Pour the heavy whipping cream into a large bowl and beat with a hand mixer, starting low and then getting faster. Once the cream starts to thicken, add the powdered sugar and orange zest. Continue to beat on high until it holds soft peaks.
  7. Remove the side of the tart pan, cut, and top with the whipped cream, if desired.

NOTES:

I used fresh passion fruit. Cut the passion fruit in half and squeeze everything into a fine mesh strainer over large glass measuring cup. Separate any pieces of pulp from the seeds and add it to the juice until you get 1/4 cup. I also used fresh blood orange juice.
