Pistachio cardamom crescent cookies

It's National Cookie Day and I'm celebrating with some blogger friends! We are all sharing a new cookie recipe (check them all out at the bottom of this post) and just in time for holiday baking time.

In our house, we have some traditional Christmas cookies that we make every year, but I always like to try out a new cookie or two, especially to take to a party or potluck. 
 
These cookies will be making future appearances on our holiday cookie trays. They are so flavorful and shortbread is always a favorite of mine.

Pistachios and cardamom are a favorite pairing of mine and the combination works well in this shortbread cookie base. Crescent cookies like these are often made with walnuts or pecans and sometimes cinnamon, but I thought pistachios and cardamom would be a nice change. 
 
Plus, the green pistachio and the cardamom flavor are extra festive for Christmas and the holiday season.

We also celebrate the winter solstice in our house. We read solstice books, make pine cone bird feeders to hang outside, get oranges in our Christmas countdown calendar, and often make a loaf of Winter Solstice sun bread.
 
The crescent moon shape of these cookies make them a perfect treat for yule celebrations. Their shape is lovely for celebrating the winter, acknowledging nature in your celebrations, and the change of seasons.

Pistachio Cardamom Crescent Cookies

Pistachio Cardamom Crescent Cookies

Buttery shortbread crescent cookies made with ground pistachios and cardamom make a lovely addition to your holiday dessert tray. The aroma and sweet taste of cardamom pairs nicely with the pistachios.

ingredients:

  • 1-1/4 cups all-purpose flour
  • 3/4 teaspoon ground cardamom
  • 3/4 cup powdered sugar, divided, plus more for dusting
  • 1/2 cup roasted and salted shelled pistachios
  • 1/2 cup (1 stick) unsalted butter, at room temperature
  • 1/2 teaspoon vanilla extract

instructions:

How to cook Pistachio Cardamom Crescent Cookies

  1. Preheat the oven to 350 degrees. Line two baking sheets with parchment or silicone baking mats.
  2. In a medium bowl, whisk together the flour and cardamom. Set aside.
  3. Place the pistachios in a food processor along with 1/4 cup powdered sugar. Pulse until finely ground.
  4. In a mixer with a paddle attachment or a large bowl using a hand mixer, beat the butter and vanilla until light and fluffy. Add the nut mixture and beat until combined, scraping down the sides of the bowl as needed.
  5. Slowly beat in the flour mixture until combined. The dough will be dry. Transfer it to the counter top and bring it together with your hands. Knead and pat the dough until it comes together.
  6. Working with heaped tablespoons of dough, roll the dough into a log and gently bend into a crescent shape tapering at the ends. Flatten the cookies slightly.
  7. Place on the prepared baking sheets. Bake for about 12-13 minutes, until lightly golden on the sides and bottom.
  8. Place the remaining 1/2 cup of powdered sugar in a shallow bowl. Carefully coat each warm cookie in the powdered sugar. Transfer to a wire rack to fully cool and then dust the cookies with a little more powdered sugar.

NOTES:

If using unsalted pistachios, add 1/4 teaspoon of salt into the flour mixture.
