Eggnog snickerdoodles

Snickerdoodles are made extra festive for the holidays with lots of nutmeg on top and eggnog in the batter! These classic cookies get a little makeover to be perfect for Christmas time eating and gifting.

If you like snickerdoodle cookies, you are sure to love this eggnog version. Snickerdoodle cookies have the perfect chewy cookie texture that I love. They are a favorite of mine all year round with their tradition cinnamon-sugar coating, but this year I decided to switch them up with lots of freshly grated nutmeg and some eggnog!

Nutmeg is the predominant spice in eggnog, but it also has cinnamon in it, so I've included both of those in the dough and in the sugar topping. Between those spices and using eggnog in the batter, the eggnog flavor really shines through.  

I like to use freshly grated nutmeg when it is a predominant flavor like this. It really makes for a stronger and delicious nutmeg flavor. You can find whole nutmeg at most larger grocery stores and then grate it on a microplane.

We are eggnog fans in our home. I know it's one of those things people seem to either love or hate, but I'm a person on the love side. I think that I may like eggnog flavored baked goods even more than I like the drink itself. 

These cookies have already been a big hit in our house. This recipe makes a lot of cookies, so it's a great recipe for holiday cookie gifting, a cookie exchange, or to share with your family and neighbors. 

These cookies will be making an appearance on our family's Christmas cookie trays for years to come. I hope they will become a favorite of yours as well.

Eggnog Snickerdoodles

Eggnog Snickerdoodles

Snickerdoodles are made extra festive for the holidays with lots of nutmeg on top and eggnog in the batter! These classic cookies get a little makeover to be perfect for Christmas time eating and gifting.

Ingredients

  • 1 cup unsalted butter, softened
  • 2-1/3 cups sugar, divided
  • 1 large egg
  • 1 teaspoon pure vanilla extract
  • 4-1/2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1 teaspoon salt
  • 1 teaspoon cream of tartar
  • 1-3/4 teaspoons freshly ground nutmeg, divided
  • 1/2 teaspoon ground cinnamon, divided
  • 1 cup eggnog, well-shaken

Instructions

  1. Preheat the oven to 350 degrees. Line two baking sheets with parchment paper or silicone baking mats.
  2. In a bowl of a stand mixer with a paddle attachment, or in a large bowl with a hand mixer, cream together the butter and 2 cups of sugar until light and fluffy. Beat in the egg and vanilla.
  3. In a large bowl, whisk together the flour, baking soda, salt, cream of tartar, 3/4 teaspoon nutmeg, and 1/4 teaspoon cinnamon.
  4. With the mixer on low, begin adding the flour mixture into the butter mixture a couple cups at a time, alternating with the eggnog.
  5. In a small shallow bowl, stir together the remaining 1/3 cup of sugar, 1 teaspoon nutmeg, and 1/4 teaspoon cinnamon.
  6. Use a small (1 tablespoon) cookie scoop to scoop the dough. Roll into a ball and then roll into the sugar and spice mixture. Place on the prepare baking sheets about 1-inch apart.
  7. Bake for about 10-11 minutes, rotating the baking sheets halfway through. They are done when the bottoms are just turning golden, the edges are set, and the cookies start to crack.
  8. Let cool for a minute on the baking sheet and then cool completely on wire racks. Repeat until all the dough has been used.
  9. Store in an airtight container for several days.

Notes:

I like to use freshly grated nutmeg from whole nutmegs. You can find whole ones in larger grocery stores. Pre-ground works fine as well, but I prefer the freshness of whole nutmeg. You can replace the vanilla extract with rum extract for a spiked eggnog flavor.

  4. You're not the only one that loves eggnog. I could drink it by the quart. These cookies would be dangerous in this house because, if lucky, they might last long enough for my husband to have one or two. :) Hope you and your family are having a wonderful holiday season!!
