Slow cooker honey mustard chicken

Chicken breasts are slow cooked with a honey and Dijon mustard sauce and then shredded when tender. This chicken makes delicious sandwiches or can be eaten on wraps or over rice.

Using the slow cooker or Crock Pot is my favorite way to make simple and easy meals. I like to set it and go and then have only minimal prep at dinner time. Honey mustard chicken is a favorite in our house. I've been making it for years and it's always a hit.

My favorite way to eat this chicken is piled high on a pretzel roll and then topped with some shredded sharp cheddar cheese and a few dill pickle slices. The pretzel rolls go so well with the honey and mustard flavors and the pickles add a perfect contrast.

How else can you serve this chicken? It's also great on other rolls like kaiser, sliders, or hamburger buns, in a wrap, or served over rice with a side of vegetables. It's versatile and also makes easy leftover lunches.

What do you serve with honey mustard chicken? My favorite is a side of baked sweet potato fries! A vegetable like green beans, carrots, or broccoli, baked beans, salad, or regular fries are all great accompaniments as well. Dill pickle potato salad would also be delicious with this chicken. 

Honey mustard is a favorite dip and dressing of my kids, so I like to incorporate that flavor into other meals. This recipe uses Dijon mustard, honey, some spices, and Worcestershire sauce to flavor the chicken. 

To change up the flavor you can add a bit of spicy mustard or brown mustard (a couple tablespoons) to give it a little kick, or a dash of hot sauce.

Slow Cooker Honey Mustard Chicken

Chicken breasts are slow cooked with a honey and Dijon mustard sauce and then shredded when tender. This chicken makes delicious sandwiches or can be eaten on wraps or over rice.

Ingredients

  • 2 lbs. boneless, skinless chicken breasts
  • 1/2 cup honey
  • 1/2 cup Dijon mustard
  • 2 teaspoons Worcestershire sauce
  • 1 teaspoon garlic powder
  • 1 teaspoon sweet paprika
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon salt
  • 1/2 teaspoon freshly ground black pepper
  • dried parsley, for garnish, optional

Instructions

  1. Lightly spray the inside of your slow cooker with cooking spray.
  2. Whisk together the honey, Dijon mustard, and Worcestershire sauce in a large glass measuring cup or bowl.
  3. Place the chicken in the slow cooker. Sprinkle the chicken with the garlic powder, paprika, onion powder, salt, and pepper. Pour the honey mustard mixture over the top.
  4. Cover and cook on low for about 6 hours. Shred the chicken using tongs or two forks. Check for seasoning and adjust if needed. Serve hot as desired.
