Dark chocolate black cat cookies #HalloweenTreatsWeek

Halloween is coming and you know it's one of my favorite times of the year. I'm so excited to be participating on #HalloweenTreatsWeek again this year. It's such a fun event. Check out the bottom of this post for more recipes and to enter the giveaway!

To make these cats I started with a chocolate shortbread cookie recipe that I could roll into logs to slice into circles. I used my fingers to "pinch" the dough into two ears at the top. 

Then I used a small metal fork to make the whiskers, added chocolate chips for the nose, and used Halloween colored candy coated chocolates for the cat's eyes. You can see the steps in the photo below.

As always, please don't worry about yours turning out "perfectly" - mine are not "perfect" either. These cookies are meant to be fun for Halloween, kids, and parties, and get-togethers. 

Each one will probably be slightly different, and that's absolutely okay. That's part of the charm of homemade.

For these cookies, I used dark chocolate chips and dark chocolate cocoa powder so that the cookies would be as dark and possible to look like black cats. I also like dark chocolate a lot and like to use it in baking. 

You can use regular cocoa powder if you wish and/or regular semi-sweet chocolate chips if you don't love dark chocolate flavor. 

Or chose one dark, and one semi-sweet for a contrast in flavor. The cookies will be lighter in color though if you switch from dark chocolate.

Dark Chocolate Black Cat Cookies

Dark chocolate slice and bake cookies are shaped like cat faces and topped with chocolate chips and candy coated chocolates for a festive and fun Halloween cookie.

Ingredients

  • 1/2 cup dark chocolate chips
  • 2-1/4 cups all-purpose flour
  • 1/3 cup dark chocolate cocoa powder
  • 1/2 teaspoon salt
  • 2 sticks (1 cup) unsalted butter, softened
  • 1/2 cup light brown sugar, such as Dixie Crystals
  • 1/2 cup granulated sugar, such as Dixie Crystals
  • 1 large egg
  • 1 teaspoon vanilla extract
  • extra chocolate chips, for decorating
  • candy coated chocolate candies, for decorating

Instructions

  1. Place the chocolate chips in a small bowl and and microwave for 30-seconds. Stir and then microwave again at 15 second intervals, stirring after each, until melted. Alternatively, melt the chocolate in a double boiler, stirring often.
  2. In a medium bowl, whisk together the flour, cocoa powder, and salt. Set aside.
  3. In a stand mixer with a paddle attachment (or in a large bowl with a hand mixer), mix together the butter, brown sugar, and granulated sugar until light and fluffy.
  4. Mix in the egg and vanilla until combined. Scrape down the sides of the bowl, as needed. Mix in the melted chocolate.
  5. Turn the mixer to low and slowly add the dry ingredients until the dough comes together.
  6. Divide the dough in half. Place on a large sheet of plastic wrap. Roll the dough out into a log shape, approximately 8 inches long and 1-1/2 to 2 inches wide. Smooth the outside out as much as possible. Wrap each log in the plastic wrap. Refrigerate for at least 2 hours.
  7. When ready to bake, line two baking sheets with parchment or a silicone baking mat. Preheat the oven to 350 degrees.
  8. Slice the cookies about 1/4-inch thick. Place cookies on the baking sheets about one inch apart.
  9. Pinch the top of each cookie to create the cat ears. Use a small fork to press into the sides of each cookie to make the whiskers. Then add the chocolate candies for eyes and a chocolate chip nose.
  10. Bake the cookies for about 12-14 minutes, rotating the pans halfway through baking. Let cool on the baking sheet for one minute and then place on a cooling rack to cool completely.
  11. Repeat until all dough is used. Store in an airtight container for several days.
