Butterscoth pudding cookies

Butterscotch flavor is a combination of butter and brown sugar. It's so flavorful, buttery, and sweet. These cookies contain both butterscotch pudding mix and butterscotch chips for an extra flavor kick. You get that rich, buttery butterscotch flavor in every bite.

These cookies are a recipe we made in our house recently for a Harry Potter movie night. Butterbeer makes a frequent appearance in these books and movies and so I wanted to incorporate the butterscotch flavor into our dessert for that night. 

I just started reading the books aloud to our kids this fall and we've finished the first one. I'm glad to be able to share my love of those stories with them. After we finish each book we will watch the movie and have a Harry Potter themed dinner and movie snacks.

These cookies were a hit with everyone who tried them. We gave some to neighbors and family since they make a large batch. This large batch makes them perfect for sharing and bringing to gatherings or a potluck event.

Butterscotch pudding cookies are nice for anytime of the year, but I find the flavor to be perfect for the fall and winter time seasons. It's a warm, rich flavor that for me feels cozy for colder months. The aroma is so lovely, too.

Adding pudding mix to your cookies is a great way to add flavor to your cookie dough. It also makes for moist and chewy cookies. 

The butterscotch pudding mix makes every bite of these cookies extra flavorful. Plus, they contain brown sugar and butter in the dough to really enhance that butterscotch flavor.

Butterscotch Pudding Cookies

Butterscotch Pudding Cookies

Soft and chewy butterscotch cookies with butterscotch chips make a delightful dessert for anyone who loves butterscotch flavor.

Ingredients

  • 1 cup (2 sticks), unsalted butter, softened
  • 3/4 cup light brown sugar
  • 1/4 cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 2-1/2 cups all-purpose flour
  • 1 package (3.4 or 3.5 oz) instant butterscotch pudding
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 bag (10 oz.) butterscotch chips

Instructions

  1. Preheat the oven to 350 degrees. Line two baking sheets with parchment paper or silicone baking mats.
  2. In the bowl of a stand mixer with a paddle attachment, or in a large bowl with a hand mixer, beat together the butter, brown sugar, and granulated sugar until light and fluffy.
  3. Beat in the eggs and vanilla.
  4. In a medium bowl, whisk together the flour, pudding mix, baking soda, and salt until combined. Slowly pour the mixture into the stand mixer bowl and mix until just combined.
  5. Fold in the butterscotch chips.
  6. Using a tablespoon scoop, place a heaped scoop of batter on the prepared baking sheets, about one inch apart from one another.
  7. Bake two sheets at a time, for 10-11 minutes, rotating halfway through. Be careful to not overbake the cookies. They should be set and just golden at the edges.
  8. Let cool on the baking sheets for 2 minutes and then place the cookies on wire cooling racks until fully cooled. Repeat with the remaining batter.
  9. Store in an airtight container for several days.

  2. I have been wanting to start the books with LD. I haven't ever read them and I think it would be fun to read them together. I need to order them. I love the idea of having a dinner and movie night after reading each book. We'll have to make these cookies too!
