Rhubarb is something that I look forward to every late spring and early summer. We always had rhubarb pies and strawberry rhubarb crisp from out garden rhubarb when I was a kid. Those are still two of my favorites today.
However, I like to make all kinds of rhubarb recipes and enjoy trying it in new ways. Rhubarb, while technically a vegetable, goes so well in baked goods because of its super tart flavor. It provides a great foil for the sweetness of pies, crisps, cakes, and more.
These rhubarb cookies are chewy and soft. However, they are very moist, so once they are stored in a container, they will get softer and more cake-like the next day. I like them best the first day, but I still enjoy them the next couple of days.
Due to their high moisture content, these cookies don't store for long. As I mentioned I like them best on day one before they've been stored in a closed container. However, they are best eaten within 2-3 days.
But, please don't let that scare you to try these. They are delicious and so flavorful. The recipes makes about two dozen cookies, so that is a nice amount for a little gathering or party where they will all get eaten right away if you want to keep them more on the chewy side.
I used a combination of ground cinnamon, ground ginger, and freshly ground nutmeg in these rhubarb cookies to give them their spice. These three warm spices all pair nicely with the tart rhubarb and the sweet brown sugar.
I also really enjoy cardamom with rhubarb. You can try different spices to get your favorite flavor combination.
If you find your dough is a bit too wet, you can add another tablespoon of flour. It will depend on how fresh and how moist your rhubarb is. I would not recommend making these cookies with frozen rhubarb as it will be too wet.
Make your rhubarb pieces on the smaller/thinner side when you are cutting it. This will help it to stick inside the dough better.

Spiced Rhubarb Cookies
Soft, lightly spiced, buttery, sweet-tart rhubarb cookies are a flavor combination you need to try this rhubarb season.
Ingredients
- 1/2 cup (1 stick) unsalted butter, softened
- 1 cup lightly packed light brown sugar
- 1 large egg
- 1 teaspoon vanilla extract
- 1-3/4 cups all-purpose flour
- 1/2 teaspoon salt
- 1/2 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/2 teaspoon ground cinnamon
- 1/4 teaspoon ground ginger
- 1/4 teaspoon ground nutmeg
- 1 cup finely chopped rhubarb
Instructions
- Line a baking sheet with parchment paper or a silicone baking mat. Preheat the oven to 375 degrees.
- Beat the butter and brown sugar together using a stand mixer with a paddle attachment or an electric hand mixer. Beat in the egg and vanilla until combined.
- In a medium-large bowl, whisk together all the dry ingredients (flour, salt, baking powder, baking soda, and spices).
- Add the dry ingredients to the wet and slowly beat them in until just combined.
- Use a wooden spoon to fold in the rhubarb.
- Use a 1-inch cookie scoop to form dough balls and place them about 1-inch apart on the prepared baking sheet.
- Bake for about 12 minutes, until they are spread and golden on the bottom and edges.
- Let the cookies sit on the baking sheet for 2 minutes and then remove them to a cooling rack to cool.
- Repeat until all the dough has been used.
- Store cookies in an airtight container for up to 3 days.
