Carrot cake fans will love this baked oatmeal that is full of all the flavors of carrot cake. It's also has a cream cheese topping to mimic the tradition cream cheese frosting on carrot cake.

Baked oatmeal is a delicious breakfast that is sure to be a family hit. You can flavor baked oatmeal with many different fruits, spices, nuts, and more. I've made baked oatmeal in the past with peanut butter, almond butter, gingerbread, pumpkin, and more.

But, the addition of grated carrots, raisins, walnuts, and warm spices like cinnamon make this baked oatmeal an extra delicious and flavorful oatmeal breakfast.

The cream cheese topping really makes this baked oatmeal and gives it that extra touch to really taste like a carrot cake. It's optional, of course, but really adds that carrot cake frosting flavor and it is so creamy and delicious.

The cream cheese topping is made with softened cream cheese, milk, cinnamon, and little bit of brown sugar. It's pretty simple to make, so try to include it if you can.

This is a great breakfast for kids as well - it's full of flavor and even has some veggies in it. Serve this baked oatmeal anytime of the year, or around Easter and spring time since bunnies love carrots.

Baked Carrot Cake Oatmeal

Baked Carrot Cake Oatmeal

All the flavors of carrot cake put into a hearty and delicious baked oatmeal breakfast. This baked carrot cake oatmeal is a yummy way to start the day.

Ingredients

For the baked oatmeal
  • 1-1/2 cups quick cooking oats
  • 1/4 cup lightly packed brown sugar
  • 1 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon ground ginger
  • 1/4 teaspoon ground nutmeg
  • 1 large egg
  • 1/4 cup melted unsalted butter, plus more for greasing pan
  • 3/4 cup milk
  • 3/4 cup finely grated lightly packed carrots
  • 1/3 cup raisins (I used golden)
  • 1/4 cup finely chopped walnuts
For the topping
  • 2 tablespoons cream cheese, softened
  • about 1 tablespoon milk
  • good pinch of ground cinnamon
  • 2 teaspoons brown sugar

Instructions

  1. Preheat the oven to 350 degrees.
  2. Lightly grease an 8"x8" baking dish.
  3. In a large bowl, stir together the oats through nutmeg. Then stir in the egg through walnuts until well-combined. Spread evenly into a baking dish.
  4. Bake for about 25-27 minutes, or until golden and an inserted toothpick comes out cleanly from the middle.
  5. While it is baking, whisk together all of the topping ingredients until smooth, adding more or less milk to get the consistency you desire (I like to set it on the stove so the heat from the oven warms it slightly and helps melt the cream cheese).
  6. Let cool slightly and then cut/scoop and serve with the topping.
