Slow cooker honey sesame ginger chicken

This tender chicken is sweet, savory, and has a touch of warmth from ginger and the best part is it cooks up easily in the slow cooker until it is falling apart. This is a family friendly dish that is both tasty to eat and easy to make.

I love slow cooker dishes and have decided to develop more recipes to share here and also to share some of our favorites that I haven't yet. The slow cooker can be such a time saver and it helps to get dinner on the table faster when you need to.

I usually serve this honey sesame ginger chicken with rice and a side of quickly stir-fried sugar snap peas and carrots. Broccoli is another perfect side vegetable or some stir fried cabbage. Instead of rice, you can serve this chicken with noodles such as thin rice noodles or ramen. 

This meal has become a favorite around our house since I started toying around with the recipe and flavors. I love the combination of honey and ginger and the other Asian-inspired flavors all come together to create a delicious sauce.

Since I'm feeding little kids, I keep the heat low and serve up extra Sriracha on the side for the adults. I add only a small squeeze of it to the slow cooker and then allow people to add more at serving to their tastes. If you know you want a dish with more heat, feel free to add about a teaspoon or so and adjust from there.

My kids also really like to put "sprinkles" on top (the sesame seeds) and we let them add some to their plates to make it more fun and hopefully encourage them to try out the chicken. 

I'm always looking for ways to get them more involved and excited about food and to try to raise adventurous and confident eaters.

Slow Cooker Honey Sesame Ginger Chicken

This tender chicken is sweet, savory, and has a touch of warmth from ginger and the best part is it cooks up easily in the slow cooker until it is falling apart.

Ingredients:

  • 2 lbs. boneless, skinless chicken thighs
  • 1/2 cup soy sauce (I like low sodium)
  • 1/3 cup honey
  • 1 heaped tablespoon cornstarch
  • 1 heaped tablespoon freshly grated ginger root
  • 4 garlic cloves, minced
  • 2 tablespoons sesame oil
  • 1/8 teaspoon white pepper
  • Sriracha, to taste, optional
  • 2 green onions, thinly sliced, greens and whites separated
  • sesame seeds, for topping
  • 1 cup white rice, cooked to package directions

How to cook Slow Cooker Honey Sesame Ginger Chicken

  1. Place the chicken in the slow cooker.
  2. In a large bowl or large glass measuring cup, whisk together the soy sauce through white pepper. Stir in Sriracha, if using - I use about 1/4 to 1/2 teaspoon and then let those who want it hotter add their own to their plates. Pour the mixture over the chicken. Add the white and light green portions of the green onions.
  3. Cook on high for about 5 hours, until the chicken is tender and the sauce has thickened. Serve with rice and top with sesame seeds and the reserved green onion tops. Also serve with extra Sriracha, if desired.
