Apple vanilla oatmeal cookies #AppleWeek

I hope everyone is enjoying #AppleWeek! A week long celebration of apple recipes! Apple season is one of my favorites because that means it is fall. 

Apple picking with our family is a tradition we've done for years and now we get to take our kids, too, which makes it even sweeter!

For years I've been wanting to try these cookies and I finally did (with some tweaks). They were a big hit with my family, especially the kids. The delicious vanilla bean paste adds a deep vanilla flavor so I didn't want to overpower the flavor with too much cinnamon or other spices that I usually use with apples.

The vanilla and maple syrup really compliment the oats nicely and all those little pieces of fresh apple make a perfect combination of flavor and texture. Plus I got to use Flahavan's - one of my favorite oats - for this recipe!

Yield: 18 cookies

  Apple Vanilla Oatmeal Cookies

Soft and chewy oatmeal cookies filled with vanilla bean paste and apples make a perfect fall treat.

ingredients:

  • 1 cup instant oats, such as Flahavan's
  • 3/4 cup whole wheat pastry flour
  • 1-1/2 teaspoons baking powder
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon salt
  • 2 tablespoons unsalted butter, melted and slightly cooled
  • 1 large egg
  • 1/2 cup pure maple syrup
  • 1 heaped teaspoon vanilla bean paste, such as Taylor and Colledge
  • 1 cup finely chopped apple, unpeeled

instructions:

How to cook Vanilla Apple Oatmeal Cookies

  1. In a medium bowl, whisk together the oats through salt. In a large bowl, whisk together the butter through vanilla bean paste. Stir the dry ingredients into the wet until combined. Fold in the apple.
  2. Cover and bowl and refrigerate the tough for 30 minutes.
  3. Preheat the oven to 325 degrees. Line two baking sheets with parchment or silicone baking mats.
  4. Roll the dough into balls using a heaped tablespoon of dough. Place on the baking sheet 1-inch apart and flatten slightly.
  5. Bake for about 14-16 minutes, until the bottoms and sides are just golden. Let the cookies rest on the baking sheets for another 10 minutes and then remove to wire racks to cool.

NOTES:

I like to use a firm apple that is sweet or sweet/tart like Empire, Envy, Fuji, Gala, etc. These cookies are best enjoyed the first day of baking as they are extremely moist.
