Butter chicken has always been one of my favorite dishes to order or grab at the buffet when we go out for Indian food. We used to live very closely to several Indian restaurants, but now there are not any close to our house. I wanted to make this dish at home with ease and also wanted to keep it mild for our kids. This recipe covers both of those requirements!

As you may know, we have two three year olds in our house. Since we follow The Division of Responsibility in Feeding, all of our meals are family meals. I want to encourage my kids to try all foods we eat. Sometimes that's easier said than done with little ones. However, one way I make food approachable for them is to make sure it's not too hot and spicy.

This recipe falls into a mild flavor profile for my husband and I. The flavors and spices are all still there, just not as hot as I'd make it before kids. You can definitely adjust that and increase the amounts of curry powder and ginger in the recipe by 1/2 to 1 teaspoon. Also, you can add a bit of cayenne pepper or other crushed red hot pepper if you really want a kick!

Both the kids ate this dish and one especially enjoyed it a lot! The other mostly loved the Naan and the sauce and that's okay. It's all about exposure and keeping meals no pressure.

Easy Slow Cooker Butter Chicken

ingredients:

  • 2 lbs. boneless, skinless chicken thighs, cut into 1-inch pieces
  • salt and freshly ground black pepper, to taste
  • 1/2 cup finely chopped sweet yellow onion
  • 3 garlic cloves, minced
  • 1 (6 oz.) can tomato paste
  • 1/2 cup chicken stock
  • 1 teaspoon ground coriander
  • 1 teaspoon Garam masala
  • 1 teaspoon ground turmeric
  • 1 teaspoon yellow curry powder
  • 1/2 teaspoon ground ginger
  • 1/2 cup heavy whipping cream
  • juice of half a lemon
  • 1 cup Basmati rice, cooked to package directions, for serving
  • Naan bread, for serving

How to cook Easy Slow Cooker Butter Chicken

  1. Lightly spray the inside of your slow cooker with cooking spray.
  2. Place the chicken in the slow cooker in an even layer. Season with about 1/2 teaspoon of salt and a few grinds of black pepper. Top with the onion and garlic.
  3. In a large glass measuring cup or medium bowl, whisk together the tomato paste through ginger. Pour over the chicken.
  4. Cook on low for 4.5 to 5 hours, until the chicken is tender. Stir in the heavy whipping cream and lemon juice. Taste and adjust seasoning as needed. Let warm and then serve with the rice and/or Naan.

  4. Butter chicken is always something I've wanted to make, but never had. Yours looks absolutely delicious. What an inspiration! I don't have a slow cooker but I'm sure slow cooking it in the oven or on the stovetop would work. Thanks for sharing!
