Yellow squash banana bread

If you enjoy zucchini bread and banana bread, you will like this combination yellow squash banana bread recipe that has the flavors of both. Instead of zucchini, I used yellow squash in this recipe because it's what we've had in our garden this year. However, any summer squash can be used. 

This time of year summer squashes are so abundant and you can't have too many ways to use them up. There's always a lot of zucchini ideas, but not as many for yellow squash.

A touch of cinnamon, whole wheat flour, and brown sugar help to give this loaf extra flavor. Yellow squash provides a hint of color as well. Since the bananas are sweet, I've kept the sugar to a half of a cup in this recipe and I think that it is plenty sweet.

To make this bread, you need to grate the yellow squash on the large holes of a box grater, or shed it in a food processor as I did above. Leave the skin on for the color, flavor, and for ease. 

Since this recipe is for a banana bread, you will need two very ripe bananas to make your bread. You want them to be spotted brown, fragrant, and soft. This will ensure they can be easily mashed as well as give the bread the best banana flavor.

Cinnamon is the only spice I used in this recipe, but you could add a bit of nutmeg or ginger as well. Both of those would compliment the flavors nicely. I kept it simple here though with only a teaspoon of cinnamon and there is also vanilla extract.

Serve this bread with your morning eggs and coffee or tea. It is nice for a mid-morning or afternoon snack, or as a lunchbox item for back to school time.

Yellow Squash Banana Bread

Yellow summer squash and bananas collide in this delicious loaf of quick bread that's perfect for along with your morning coffee, tea, or as a mid-morning snack.

Ingredients

  • 1 cup all-purpose flour
  • 1/2 cup whole wheat flour (or more all-purpose)
  • 1 teaspoon cinnamon
  • 1 teaspoons baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 2 medium very ripe bananas (about 1 cup mashed)
  • 1/4 cup granulated sugar
  • 1/4 cup lightly packed brown sugar
  • 1/3 cup olive oil (or vegetable oil)
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1 cup shredded yellow squash

Instructions

  1. Preheat the oven to 350 degrees. Spray an 8"x4" loaf pan with cooking spray.
  2. In a medium bowl, whisk together the flours, cinnamon, baking powder, baking soda, and salt.
  3. In a large bowl, mash the bananas with a fork or potato masher until there are no chunks. Stir in the sugars, oil, egg, and vanilla until well-combined.
  4. Stir the dry ingredients into the wet ingredients until just combined. Fold in the squash.
  5. Pour into the loaf pan and spread evenly. Bake for 50-60 minutes, until golden and an inserted toothpick comes out clean.
  6. Place the pan on a wire rack or pot holder to cool for about 15 minutes. Then remove the bread from the pan and cool on a wire rack. Slice when just warm or at room temperature.
  7. Store in an airtight container.
