Banana bread can be made with so many different and interesting add-ins. I love regular banana bread a lot. It's delicious and a great way to use up browned bananas. However, adding in some finely grated carrots adds a bit of color and another touch of sweetness.
When I make this banana bread, I grate the carrots on the small side of a box grater. This makes the carrot very thin and fine allowing it to cook and soften while the batter bakes. It also distributes nicely in the batter this way.
When you are making banana bread, or baking anything with bananas, you want them to be very ripe. Browned and soft bananas will mash easily and impart the greatest banana flavor into your bread and other baked goods.
Walnuts add nice texture and flavor in this bread. However, you can leave them out if you don't want to use them. Or, use pecans instead if you prefer.
This quick bread makes a delicious snack or addition to a breakfast or brunch. It's perfect with a hot cup of coffee or tea, or along with some scrambled eggs in the morning. It makes a great snack for after school or to add to lunchboxes.
The carrot makes this a great recipe to make around Easter and spring time (because bunnies love carrots). It's also a great way to add an extra bit of vegetables to to a banana bread.
Carrot Banana Bread
Ingredients
- 1 cup all-purpose flour
- 1/2 cup whole wheat flour (or more all-purpose)
- 1/4 teaspoon salt
- 1/2 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1 teaspoon ground cinnamon
- 1 cup mashed very ripe bananas (about 2 medium bananas)
- 1 cup finely grated carrots, lightly packed
- 1 large egg
- 2/3 cup granulated sugar
- 1/4 cup olive oil (or vegetable oil)
- 1/4 cup unsweetened applesauce
- 1/2 cup finely chopped walnuts, optional
Instructions
- Preheat the oven to 350 degrees. Lightly grease a 9"x5" loaf pan.
- In a medium bowl, whisk together the flour through cinnamon. In a large bowl, whisk together the bananas through applesauce. Stir the dry ingredients into the wet and then fold in the walnuts, if using.
- Pour and spread evenly into the pan. Bake for 55-65 minutes, until the loaf is golden and an inserted toothpick comes out clean. Let cool for about 10 minutes before removing from the pan. Then let cool for another 10 minutes before slicing.
- Serve warm or at room temperature. Store in an airtight container for no more than 3 days.
