Slow cooker honey mustard chicken

Chicken breasts are slow cooked with a honey and Dijon mustard sauce and then shredded when tender. This chicken makes delicious sandwiches or can be eaten on wraps or over rice.

Salmon burgers with lemon-chipotle mayo

I love to make salmon patties with canned salmon. I think they are delicious and salmon is so healthy for you (and canned salmon is an economical seafood choice). I was inspired by those patties to make them into something like a burger.

Also, I'm so very excited to report that both of my kids ate them (I put ranch on theirs instead of the chipotle mayo). I made the burgers mild because we were feeding two toddlers as well, but otherwise I would have added more chiptole to the burgers themselves (feel free to add a pepper if you like). 

Making burgers from canned salmon is also a time-saver! They salmon is already cooked and there are no bones - all you need to do is add flavor, form the patties, and give them a quick fry in a skillet. 

This recipe will make four burgers. I topped ours with lettuce and tomato and served them on a kaiser roll with a side of sliced pickles and roasted local asparagus.

My bushel of apples is slowly dwindling down... We've picked out a bunch of small ones and put them away in the refrigerator for snacks. I still have quite a few for cooking though. I've made some of my standbys like applesauce and autumn pork roast, and new recipes like apple crisp pie and these burgers that were inspired by this recipe

I like incorporating fruits into savory dishes, so I was pretty excited to try out these burgers, plus they used up two more of my apples! These burgers were really moist from the addition of grated apple into the turkey and the topping was a nice mix of sweet, tart, and a touch of heat.

This recipe will make four burgers. I served them with some simple roasted purple cauliflower (we got a beautiful head at the farmers' market last weekend). It was a great weeknight autumn meal and unlike any burger I've had before.

Tarragon and grape chicken salad

Apparently chicken salad made with tarragon and grapes is pretty common, but it was something I never had until a few years ago. We were in Baltimore and stopped at a small coffee and sandwich shop for some lunch along the waterfront. I got a tarragon chicken sandwich and thought it was absolutely delicious. This recipe is my attempt to re-create that sandwich.

It's odd because the same thing happened to me with curry chicken salad, which I had for the first time at a small shop when we were in Vermont. I guess chicken salad just wasn't something I ate growing up... Anyways, this chicken salad may be my favorite. Tarragon has quickly become one of my favorite herbs and it pairs so nicely with the sweet grapes and chicken. I like to make this with leftover roasted chicken and/or chicken breasts. The recipe is not very exact because of that - you use as much chicken as you have have proportion the other ingredients accordingly.

Turkey and cranberry paninis

These sandwiches are another way I used up some of our leftover turkey. It was a bonus because it also used up some of our leftover cranberry sauce.

This is hardly even a recipe really, but I just enjoyed them a lot. In college, I used to order a turkey and cranberry panini every once in a while from a coffee shop on campus and I always enjoyed it. I had never had one of these sandwiches before or after that. 

I remembered them recently and knew for sure that I needed to make these. I made two sandwiches on panini rolls I bought at the bakery. You could use any hearty bread. The below recipe is per sandwich.

Curry chicken salad

I actually never had curry chicken salad until last year. Once I tasted it, I thought that it would be a really easy thing to replicate at home and be great for lunches and for using up leftover roasted chicken.

Well, leftover roasted chicken is what I had so I decided to make some of this up to have in the refrigerator for a tasty lunch. Luckily, I also had some cilantro that was begging to be used up, too. You can eat this on a sandwich or wrap, with some crackers, or even just put a scoop on top of a bed of greens. 

It's a flavorful salad and it has a nice combination of tastes and textures that really make it interesting.
