I am so excited to share this recipe with you! Apples are a huge part of our fall and my husband and I love visiting our local orchard where they have new apple varieties as well as heritage varieties. We go picking every fall and I'm always creating new apple recipes as well as old favorites. 

I was soooo happy to be able to receive a box of Envy Apples to try for #AppleWeek! These apples were new to me and to my family, so trying them was a big deal for us. Our kids were sampling them with me as soon as we got the box. 

I popped one in my husband's lunch. I gave one to my mom to take home one day, too. The kids and I loved them. My husband texted me saying what a great apple it was. My mom called and asked where she could buy them. They is no question these apples are winners! They are crisp, lightly sweet, and have a delicate apple flavor - plus the skin is so pretty in color and nice in texture. 

We will definitely be adding Envy Apples to our favorites now. They are so good for eating out of hand, but they are also terrific for cooking. I knew I wanted to make at least one savory apple dish this week and had long been thinking of adding apples to a chili. 

This chili far exceeded my expectations and will be a regular in our autumn meal rotation from now on - trust me, it may sound a bit add, but all the flavors blend together for a perfect one-pot meal! 

This recipe will serve about 4-6 people depending on hunger level and any sides. It's great with corn bread or a side of corn chips/tortilla strips for scooping or sprinkling on top.

Purple sweet potato and blackberry pancakes

I've had some purple sweet potatoes in my pantry for a while now. They are a little expensive, so I don't get them often, but I really love the color so sometimes I will splurge on a bag.

I'm always trying to work different produce colors into our diet. I use them mostly for smoothies (just bake, peel, and you have a delicious and lovely colored smoothie ingredient). 

Since I am always happy to have sweet potato pancakes, I figured why not try them with the purple ones and some blackberries for extra color, flavor, and texture. Plus our kids are pretty much pancake fanatics so I knew these would be a big hit at our house (and I hope they will be at yours, too). 

These are another way to get your kids to eat something they may not otherwise eat and sneak in some extra nutrition. Fun fact, when you cut up the blackberries and add them to the batter, they will start to turn everything a strange greenish-blue color. 

It's not the color I was expecting of these pancakes, but they still taste good! This recipe will serve about 4 people.

This 'chili' is something I threw together once to use up some odds and ends of produce and it has turned into an almost weekly staple meal in our home lately. It's full of so many good-for-you ingredients and is very hearty and flavorful. 

Another thing about this chili is that it is flexible. These are the ingredients and flavors I most commonly use, but you can switch them up with delicious results. 

For example -- use chicken or ground beef or extra beans instead of turkey; sub pinto beans for the black beans; green onions instead of red onions; poblano peppers instead of bell, butternut squash instead of sweet potato; vegetable broth or water in place of the chicken stock; add jalapeno or cayenne pepper for a kick (I would do this for just my husband and I, but not the toddlers)... 

This recipe will make about 6 servings. I like to serve it with grated cheddar or jack cheese, sour cream, cilantro, and even some corn chips if you have them.

Guys, can you believe all the amazing chocolate recipes there are for #Choctoberfest already?! I hope you are all following along this week with our hashtag on all your favorite social media platforms. I'm excited to share my next recipe with you today -- Sweet Potato Brownies! Pumpkins are amazing and all, but sweet potatoes deserve fall love, too. They can be used in a lot of baked goods which may normally call for pumpkin. But, the humble sweet potato is often overlooked (except for its amazing pie). So, let's change that by using it in more delicious treats like these brownies. These brownies have a sweet potato topping gently swirled into the top of the brownies as well as a bit of sweet potato in the brownie batter itself. They are super moist, sweet with a touch of warm spices, and chocolaty, too. Plus their colors make them fun for Halloween party treats! Thanks to Imperial Sugar for inspiring these brownies which will certainly become a fall favorite for our family. In case you missed my Instagram post when I received my sugar, my little goblins were excited to help me out in the kitchen and to be taste testers for these yummy brownies!

I don't like to complain about the weather, but 55 to 60 degrees in December with rain? Really? We got our Christmas tree the other day and it was pouring rain. I'm sitting here with the window wide open. 

We live in Buffalo, NY folks - the place where everyone thinks has crazy amounts of snow. Last winter I wasn't even able to use my snowshoes once. It's weird and makes it really difficult to get into the Christmas mood! We are used to snow and cold. I don't want any blizzards or anything, but I also feel like it's spring.... It makes baking cookies or knitting gifts feel.... I don't know..... just not right....

It also makes dinners a little more difficult. Usually we are craving stews, soups, and other cold-weather dishes, but not so much when it is this warm. But, that's not going to stop me from making wintery meals. I'm hopeful that we will see some winter this year. It's still early..... and, I'm hopeful that we will have at least a covering of snow as we get closer to the holidays. 

This stew is a stick-to-your-bones kind of meal that is perfect for a cold evening. I've been wanting to make a version of this dish for quite a while and finally used this recipe to do so (I modified it slightly). The combination of ingredients sound strange -- the flavor is unlike anything I've eaten before, but after a couple bites, we both agreed that we liked it a lot! 

This dish will easily serve four hungry people. It's a simple dish to put together, but does take some time to simmer. It's a perfect stew to warm you up after coming in from the cold (if it's cold where you are).

Sweet potato pancakes with cinnamon butter

These pancakes are hearty and full of fall flavors. They are perfect for a cool morning or as part of a weekend brunch.

I made these after an early morning visit to our local farmer's market and they were delicious. I make a lot of different types of pancakes (just click on the pancakes label if you don't believe me), but I had never made sweet potato ones before. They turned out really nicely. 

Sweet potatoes are such a great, healthy food, too. I had a can of organic sweet potato puree in the pantry, but you can roast or boil a medium-large sweet potato, remove the skin, and mash it up if you would like. 

I served these pancakes with some toasted pecans, a cinnamon butter and some real maple syrup we picked up at the farmer's market. The recipe will serve about 4 people.

This sweet potato pie recipe was one of my first blog posts. My husband wanted a sweet potato pie for his birthday, so I took the opportunity to update this post and the photographs.

I know I'm still not amazing at posts and photography, but I'm certainly better than where I was with this post originally (see below for the original photo). I'm going to try harder to do this for more of my older posts.

I didn't have sweet potato pie until I was a teenager when someone gave it to my family as a gift around Thanksgiving. I thought it was so weird, until I tasted it and was completely blown away by how delicious it was. My mom and I still remember that as it was her first taste of sweet potato pie, too. It's somewhat similar in concept to a pumpkin pie, but has it's own sweeter flavor that I really love. Sweet potato pie is perfect for Thanksgiving and through all of fall and winter.
