A mix of tart and sweet apples are wrapped in cream, vanilla, and cinnamon and baked in a crust that tastes like a big oatmeal cookie in this delicious autumn dessert. This pie is closing out my #AppleWeek recipes and it's worth the wait! I hope that you are all loving #AppleWeek as much as I have been. I felt that doing a week of apple recipes just wouldn't be complete for me without a new pie recipe. Pies are kind of a thing with me. I enjoy trying out all different pie filling flavors, but also different types of crusts. I was really nervous about this pie - very unsure if the oatmeal crust would work, but it turned out perfectly! We decided that it tastes like a giant oatmeal cookies and a big bonus is that it's a snap to make - no chilling, or rolling, or using a food processor for this crust! The apple cream filling was kept very simple with a hint of cinnamon and some deep vanilla flavor using Rodelle's gourmet pure vanilla extract and the crust is made with Flahavan's Irish Oatmeal. Apples, oats, and vanilla are a lovely flavor profile. You can't beat the vanilla flavor you get with Rodelle's pure vanilla extract. And, Flahavan's oats are a family favorite - we love eating them for breakfast - they make the creamiest and smoothest oatmeal. They are also terrific for using in recipes like this. This pie will serve about 8 people and it's a perfect dessert for using up apples after apple picking this fall.

Bread baking is something that I've been wanting to do more often and become more proficient at doing well. I was working on sourdoughs until I killed my starter (must get a new one going soon), but yeasted breads and I have never really been friends. I mean, I want to do it, but I find it intimidating and a little daunting because of the amount of time it takes. Not active time really, but planning out to give enough time for kneading, rising, baking, cooling.... it can be an all day affair! So as soon as I saw that January's Fantastical Food Fight theme was oatmeal, I knew I was going to challenge myself to make a good loaf of oatmeal bread. I used this recipe as my guide, but my first loaf did not come out super (And also was dropped on the floor.... ahhhh, life with two toddlers). So, the below recipe is my slightly modified version. This loaf came out much better, but it's still not perfect. I need to keep working on it and improving my bread shaping and baking skills. This bread is slightly sweet from the molasses. It's delicious as is, but really delicious with some butter and jam. My twins love this bread. I mean they were yelling and reaching for it over the baby gate the entire time I was trying to take photos. I think it would make a mean peanut butter and jelly sandwich and is perfect for toasting up the next day for breakfast. The below recipe will make one loaf.

Baked pumpkin oatmeal

A warm and inviting autumn breakfast - baked pumpkin oatmeal is delicious and easy, plus it makes your house smell like fall! My current obsession with baked oatmeal continues with this fall flavored version. Just last month I posted two baked oatmeal recipes - peanut butter and zucchini bread. We've been eating these a couple of times a week because all four of us love them. I knew a pumpkin version was in my future because pumpkin is amazing and also it's almost time for all things pumpkin also known as FALL! My favorite time of the year! We had a streak of cooler days, but now we are back to more summer-like weather, but cooler nights. Our big maple tree is starting to turn orange and red. We now have pumpkins and mums on our front stoop and I hung up a Halloween banner on the front door. So, I'm ready for fall-mode now! Let the apple picking, pumpkin spicing, blanket snuggling, leaf peeping, and everything else fall-fun related begin! First up, a tasty hearty breakfast.

Baked zucchini bread oatmeal

The flavors of zucchini bread baked into your morning oatmeal! I am on a bit of a baked oatmeal kick lately. It started with the peanut butter one that I posted on a couple of weeks ago and now we are onto zucchini. With fall coming, I see many more versions (pumpkin! sweet potato! apple!) making an appearance in our kitchen and in our bellies in the near future. This time of year, many people are trying to find ways to use up their zucchinis. We love zucchini bread, and I figured that it would make a delicious baked oatmeal as well. Also, as I've mentioned before, we are always looking for meals that our twins can easily feel themselves. This method makes it easier for them to get the oatmeal into their mouths all by themselves (because they aren't fans of being spoon fed anymore). This zucchini version was a hit with all of us! We like to serve ours scooped into a bowl with a little milk, or just cut into a square for the little ones.

Baked peanut butter oatmeal

Creamy peanut butter, oats, brown sugar, and a touch of cinnamon baking in the morning will make your whole house smell wonderful. Lately I've been on a quest for easy and nutritious breakfasts that my twins (and my husband and I) will eat. They love scrambled eggs with vegetables, pancakes, and cut up fruit, but they've recently become resistant to being fed from a spoon and don't have much interest in learning it for themselves yet. So oatmeal, cream of wheat, and other hot cereals they used to eat are becoming harder. They will still take yogurt though - they love yogurt! I decided to try out baked oatmeal with them so that they are still eating the oats, but can pick it up themselves. This peanut butter one is a hit with the whole family. The peanut butter flavor is perfect with the lightly sweetened oats. The twins ate theirs cut into a square with some halved blueberries and my husband and I ate it scooped into a bowl with blueberries and milk. We ate it cold cut into squares again the next day. It's slightly crumbly, but also very soft so it's great for toddlers. This recipe will serve about 4-6 people, depending on age and hunger level.

Apple butter oatmeal muffins

It's March! So what am I doing posting an apple recipe?!? Those are for fall, right? Well, for me, usually they are.... but this recipe is more of a "use it or lose it" recipe. I canned more apple butter than we can eat! I even gave a bunch away, but a few jars were still lingering on my basement shelf quickly approaching the time when they'd probably need to be tossed. I really hate food waste, especially after working so hard to make and can something, so apple butter muffins are here! These muffins are a twist on my applesauce oatmeal bread and they turned out delicious -- very moist and full of yummy spices. Plus, they are even better split open with more apple butter spread on top, so perhaps we will use up all that's left before these are gone. This recipe will make one dozen muffins and will fill your home with a wonderful aroma while they are baking.
