I found some rhubarb at the farmers' market this past weekend and it inspired me to make a dessert. It's a tart/crisp/pie combination that I modeled from this apple crisp pie

This tart was a lovely early summer treat that combined two of my favorites - strawberry + rhubarb - making it burst with sweet-tart freshness. Topped with vanilla ice cream while still a touch warm from the oven, it makes a perfect ending to any meal.

These pancakes contain sour cream and then I topped with a bit more. Having a bit of savory contrast is the perfect way to have a pancake to me - otherwise they can be just too sweet for my liking, especially after you throw in the maple syrup. Bacon also helps with this. Or sausage. I'm not picky.

These pancakes will feed about 2-3 people depending on hunger level.

Strawberry-basil ice cream

Bowl of strawberry basil ice cream.

My first ice cream of the season! I wanted to make a strawberry-basil ice cream last year, but strawberry season was over when I finally bought my ice cream maker.

So I've been waiting anxiously to make it until this year. This was my second batch. The first batch tasted just as great, but I left the strawberries in quarters, and ended up not liking the texture.

This time, I mashed the strawberries, and it worked much better - they were evenly distributed but it still had a little texture so you knew there were strawberries in it.

We ate this ice cream on a hot day (as you can see from the photo - it was rapidly melting) and the best description of it is refreshing. Very refreshing.

You may think basil is an odd thing to add to a dessert, but I love herbs in sweets. The basil is a nice and refreshing background flavor that really takes the ice cream to the next level. It makes it more complex and plays nicely off of the sweet strawberries.

This recipe will make about a quart of ice cream.

Roasted strawberry balsamic vinaigrette

Jar of roasted strawberry balsamic vinaigrette.

I had some farm fresh strawberries left that were quickly getting soft on me. Originally, I was going to use them in this salad for a light dinner one evening. But since they were getting soft, I decided to turn the strawberries into the dressing. And it was a good idea!

The strawberries were very sweet and I decided to roast them until they become very soft and juicy. I added some balsamic vinegar, grainy mustard, and a bit of strawberry jam for extra sweetness. I used it to top a salad full of baby spinach and greens, red onion, toasted almonds, crispy bacon, and feta. It was such a fresh and delicious dressing and salad with a perfect combination of flavors.

We try to eat a salad dinner at least once a week in the summer, especially on the evenings when I have my boot camp class. Have a mentioned this class before? Boot camps seem to be becoming all the rage recently. I've been taking one for about 8 weeks now and I absolutely love it. It's been a great way to get me to do more cardio exercise. Plus, the class is at a school right down the road from me so I can walk to and from class - a definite bonus. But after I get home, I don't want a heavy dinner to eat after working out, plus it's later than we would usually eat dinner. This recipe will make about 2 cups of dressing.

Strawberry spoon bread with vanilla cream

Serving plate of strawberry spoon bread topped with vanilla whipped cream.

The other day we passed one of the best farms in the area and they had the first fresh-picked strawberries of the season for sale. We stopped and bought a quart and went on to our destination.
