Baked zucchini bread oatmeal
The flavors of zucchini bread baked into your morning oatmeal! I am on a bit of a baked oatmeal kick lately. It started with the peanut butter one that I posted on a couple of weeks ago and now we are onto zucchini. With fall coming, I see many more versions (pumpkin! sweet potato! apple!) making an appearance in our kitchen and in our bellies in the near future. This time of year, many people are trying to find ways to use up their zucchinis. We love zucchini bread, and I figured that it would make a delicious baked oatmeal as well. Also, as I've mentioned before, we are always looking for meals that our twins can easily feel themselves. This method makes it easier for them to get the oatmeal into their mouths all by themselves (because they aren't fans of being spoon fed anymore). This zucchini version was a hit with all of us! We like to serve ours scooped into a bowl with a little milk, or just cut into a square for the little ones.

You will see similar versions called a Zucchini Pizza Casserole, but to me there is nothing pizza-ish about this casserole. My version uses the same base idea, but the toppings are different. Maybe more like a spaghetti bake? I don't know. So I'm just calling this version a Cheesy Zucchini & Turkey Casserole. Naming dishes can be tricky sometimes. Too wordy? Not an adequate description? I don't know.
I do know that this dish was a huge hit in our family and was even completely gobbled up by two one year olds, so that's a win for me! Whatever you call it, it's delicious! It's definitely a keeper and a way to use up some of your garden's zucchini. This recipe will serve about four to five people as a main dish. Serve with a loaf of crusty bread and/or a side salad to stretch it a bit more.

I decided to make it in a skillet because I love to use my cast iron skillet whenever possible, really. The biscuit is filled with Parmesan cheese, sliced fresh zucchini, and fresh basil. It's really flavorful and delicious and makes a nice light dinner or lunch with a side salad.
While it's called a pie, it reminds me more of a quiche or cake as there's no crust and it contains a few eggs. This recipe will make enough to serve about 4 people as a main dish.
Feel free to experiment with this recipe - you can change up the veggies, herbs, and cheese to make all sorts of different flavor combinations. If you have some yellow squash, it would be lovely to replace some of the zucchini with it to vary the colors.

Pepper jack and zucchini cornbread
Oh, zucchini season... Once the zucchinis start to arrive, it's like we try to add them to everything. Grated zucchini in this and grated zucchini in that. But, in all honestly, that is OK by me. I love zucchini and enjoy finding different ways to use it. I was inspired to make this cornbread by this recipe which I modified a bit as seen below. The weather has become more bearable for using the oven, so it was the perfect time to give this cornbread a try. We just happened to have some leftover chili to eat up over the weekend and needed a side to go with it. I really love cornbread -- especially ones with cheese in them and/or a little kick from chiles. This cornbread is very savory and not sweet like many recipes that contain a lot of sugar. This was also the first time I tried sprouted wheat flour, but feel free to use all-purpose and/or some whole wheat flour.

Summer squash macaroni and cheese

I like to make classic mac n' cheese, but also like to change it up by using some butternut squash puree, including veggies like broccoli, or even spiced up with Mexican flavors, etc. This time, I figured that a bunch of shredded summer squash could be an interesting experiment. It turned out to be one of my favorite bowls of macaroni and cheese I've eaten so far!
The cheese sauce was so creamy and there were tasty flecks of yellow and green summer squash throughout. Since I stirred the squash in raw, it retained it's freshness which provided a nice contrast in flavor and texture to the cheese and noodles.
So, here we have another recipe to use up some of your zucchini and other summer squash. I used one small yellow squash and a small-medium zucchini. You can use any that you have around, though the green is a nice color contrast. I find this type of recipe to be a good transition meal from summer to fall.
This recipe will make enough to serve about four people as a main dish with a salad, or more people as a side dish.

Chocolate zucchini bread
I know that everyone out there is putting zucchini in just about everything they can think of right now. I am a believer that you can never have too many zucchini recipes. I've been using a lot of it lately (and all summer squash). And while I certainly love regular zucchini bread, when I saw King Arthur Flour's chocolate version, I was set on making some. I have been avoiding the oven at all costs this summer because it's just been so hot. But, we have been enjoying a cool trend and last Saturday morning provided the perfect opportunity to make this treat after picking up some zucchini from the farmers' market. I took it over to a family gathering that afternoon and it was gobbled up pretty quickly!
This recipe will make one loaf (8-1/2" x 4-1/2"). It is definitely more like a dessert (aka cake) than classic zucchini bread. I would recommend enjoying this as a dessert after dinner or as a mid-afternoon/mid-morning snack with a cup of tea. Below is the slightly adapted recipe that I used.
